Dough:

  • 3 cups/350g flour plus extra for rolling
  • 1 cup/250ml sour cream (full fat)
  • 3/4 cup/150gr butter
  • 1 tsp vanilla

Filling:

  • 1 1/2 cups/190g walnuts (chopped)
  • 1 cup/200g sugar
  • 1/4 cup/60ml honey
  • 1 tsp cinnamon

Additional:

  • 1 egg for brushing

Instructions

  1. Preheat Oven: Preheat your oven to 350F/180C and line your baking sheets with parchment paper.
  2. Prepare Dough: Whip softened butter with sour cream and vanilla. Gradually add flour, knead until smooth. Let it rest for 10 min.
  3. Prepare Filling: Chop walnuts, mix with sugar and cinnamon. Ensure honey is spreadable.
  4. Assembly: Divide dough, roll out into circles. Brush with honey, cut into triangles. Sprinkle nut mixture, roll up each triangle.
  5. Bake: Arrange on baking sheet, brush with egg wash, bake for 25-30 minutes.

Notes

  • You can add raisins or chocolate chips to the filling for variation.
  • These rugelach are best enjoyed fresh but can be stored in an airtight container for a few days.
