Mixed Nuts:
- 3 oz cashews
- 3 oz almonds
- 3 oz pecans
- 3 oz walnuts
- 4 oz peanuts (omit peanuts for Paleo)
Glaze:
- 1 large egg white
- 170g honey
- 1 1/2 tsp Kosher salt
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp chili powder
- 1/2 tsp red pepper flakes
- 1/2 tsp cayenne pepper (may use 1/4 tsp for milder mix)
- 1/4 tsp cracked black pepper
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- Preheat Oven: Preheat the oven to 250°F (120°C) and line a large baking sheet with a silicone liner or parchment paper.
- Coat Nuts: Whip the egg white until frothy in a bowl, then add the mixed nuts and toss to coat.
- Prepare Glaze: Add honey, spices, and seasonings to the nuts, mixing to coat evenly.
- Roast: Spread nut mixture on the baking sheet and roast for 45-60 minutes, turning every 15 minutes until lightly browned.
