These Weasleys’ Dragon Roasted Nuts are a delightful blend of mixed nuts coated in a sweet and spicy glaze, inspired by the flavors of the wizarding world. Perfect for snacking or entertaining, these crunchy nuts are a magical treat for any occasion.

Mixed Nuts:

  • 3 oz cashews
  • 3 oz almonds
  • 3 oz pecans
  • 3 oz walnuts
  • 4 oz peanuts (omit peanuts for Paleo)

Glaze:

  • 1 large egg white
  • 170g honey
  • 1 1/2 tsp Kosher salt
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/2 tsp chili powder
  • 1/2 tsp red pepper flakes
  • 1/2 tsp cayenne pepper (may use 1/4 tsp for milder mix)
  • 1/4 tsp cracked black pepper
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions

  1. Preheat Oven: Preheat the oven to 250°F (120°C) and line a large baking sheet with a silicone liner or parchment paper.
  2. Coat Nuts: Whip the egg white until frothy in a bowl, then add the mixed nuts and toss to coat.
  3. Prepare Glaze: Add honey, spices, and seasonings to the nuts, mixing to coat evenly.
  4. Roast: Spread nut mixture on the baking sheet and roast for 45-60 minutes, turning every 15 minutes until lightly browned.
  5. Cool and Store: Let the nuts cool for 10 minutes, then break into chunks. Store in an airtight container for up to 2 weeks.

Notes

  • For a spicier mix, adjust cayenne pepper to taste.
  • Make sure to stir the nuts while roasting to prevent burning.
