Sauce

  • 5 Tbsp vegan butter (divided)
  • 1 Tbsp flour (use gluten-free if needed)
  • 1 cup vegetable broth
  • 2 cups vegan sour cream (divided)
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp nutmeg

Cheese and Topping

  • 2.5 cups vegan cheddar, shredded (reserve 3 Tbsp for topping)
  • 1.5 cups cornflakes (use gluten-free if needed)

Instructions

  1. Prepare Potatoes: Peel the potatoes and rinse under cold water. Shred the potatoes using a grater, vegetable peeler, or food processor with a grater attachment to get evenly sized pieces.
  2. Preheat Oven: Set your oven to 360°F (182°C) and prepare an 8×11 inch casserole dish for baking the casserole.
  3. Cook Potatoes and Prepare Sauce: Heat 3 tablespoons of olive oil in a pan. Add the shredded potatoes and fry them for about 8 minutes until they are lightly golden brown. Meanwhile, in a separate casserole or saucepan, melt 3 tablespoons of vegan butter. Stir in the flour, then gradually whisk in the vegetable broth and 1 cup of vegan sour cream along with garlic powder, onion powder, and nutmeg. Cook the sauce until it becomes creamy and thickened, then remove from heat.
  4. Season Potatoes: Once the potatoes are golden and cooked, season them with salt and pepper to taste and set aside.
  5. Prepare Cornflake Topping: Melt the remaining 2 tablespoons of vegan butter in a small pan. Toss the cornflakes in the melted butter until evenly coated and set aside for topping the casserole.
  6. Assemble Casserole: In a large bowl, combine the fried potatoes, the creamy sauce, vegan cheddar cheese (reserve 3 tablespoons for topping), and the remaining 1 cup of vegan sour cream. Season with additional salt and pepper if needed and mix well.
  7. Bake: Transfer the mixture to the prepared casserole dish. Sprinkle the reserved 3 tablespoons of vegan cheddar over the top, then add the buttery cornflake topping. Bake in the preheated oven for 35 minutes until the top is golden and bubbly.
