Chicken:

  • 1 can (15 oz) pineapple chunks, drained
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)

For Serving:

  • 2 cups cooked rice

Instructions

  1. Cook the Chicken – Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Sauté the Onion – Add the chopped onion to the same skillet and cook for 3-4 minutes, or until softened and translucent.
  3. Add the Pineapple and Sauce Ingredients – Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if using). Simmer for 2-3 minutes until the flavors combine.
  4. Combine and Serve – Return the cooked chicken to the skillet and toss it in the sauce until fully coated. Simmer for another 2-3 minutes to let the flavors meld. Serve hot over the cooked rice.
