Tuna Mixture
- 140 g canned tuna, drained
- 1 small red onion, finely chopped
- 2 tbsp fresh chives, finely chopped
- 2 small pickles, finely chopped
- Juice of ½ lemon
- 3 tbsp cheddar cheese, grated (for the tuna mixture)
- 2 tbsp Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp Sriracha
- Salt, to taste
- Pepper, to taste
- Chili flakes, to taste
For the Sandwich
- 4 slices toast bread
- 3 tbsp cheddar cheese, grated (to add on top of the sandwich)
- Prepare the Tuna Mixture: In a medium bowl, combine the drained tuna, finely chopped red onion, chives, pickles, and lemon juice. Add 3 tablespoons of grated cheddar cheese, Greek yogurt, mayonnaise, Sriracha, salt, pepper, and chili flakes. Mix thoroughly until all ingredients are well incorporated, creating a creamy and spicy tuna filling.
- Toast the Bread (One Side Only): Heat a pan over medium heat. Place the bread slices in the pan and toast only one side until they turn a golden brown. This step adds crunch and warmth while preparing the bread for assembly. Once toasted, remove the slices from the pan and set aside.
- Assemble the Sandwich: Spread the prepared tuna mixture evenly over the toasted sides of two bread slices. Then, place the other two slices of bread on top, toasted side facing inwards so that the untoasted sides remain on the outside.
