  • 2.5 lbs chicken thighs
  • 1 tbsp cilantro, chopped

Thai Chicken Marinade:

  • 1/4 cup fish sauce
  • 1 tbsp soy sauce
  • 3 tbsp vegetable oil
  • 3 tbsp brown sugar
  • 3 tbsp lime juice
  • 34 cloves garlic
  • 1 inch ginger root, peeled
  • 1/2 shallots
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Blend the marinade ingredients: In a blender or food processor, combine fish sauce, soy sauce, vegetable oil, brown sugar, lime juice, garlic, ginger, shallots, and red pepper flakes.
  2. Marinade the chicken thighs: Place chicken in the marinade for at least 4 hours, or up to 24 hours, in the refrigerator.
  3. Cook the chicken: Heat a grill or skillet. Cook the chicken on both sides until the internal temperature reaches 165ºF.
  4. Garnish and serve: Garnish with chopped cilantro. Serve with Thai Sweet Chili Sauce.
