For the Stew:

  • 2 pounds stew meat (chuck meat)
  • 2 tablespoons flour
  • 1 large onion, roughly chopped
  • 4 to 5 carrots, peeled and chopped
  • 3 cups golden potatoes, chopped
  • 1 teaspoon fresh rosemary, diced
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, crushed
  • 2 teaspoons tomato paste
  • 2 quarts beef stock
  • 2 sprigs fresh thyme

For the Dumplings:

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon butter, room temperature
  • 1/3 to 1/2 cup milk
  • Fresh herbs (parsley and chives, optional)

Instructions

  1. Prepare and Sear the Meat: Season stew meat with salt, pepper, and garlic powder. Coat with flour and sear in a pot.
  2. Sauté the Vegetables: Sauté onion, add carrots, potatoes, rosemary, salt, pepper, garlic, and tomato paste.
  3. Combine Ingredients and Begin Stewing: Add seared meat, beef stock, thyme. Simmer for 2 hours.
  4. Prepare the Dumpling Batter: Mix flour, baking powder, salt, herbs, and butter. Gradually add milk to form a sticky dough.
  5. Add Dumplings to the Stew: Drop spoonfuls of dumpling batter into the stew and cook until done.
  6. Serve and Enjoy: Garnish with parsley and serve hot.

Notes

  • Avoid over-kneading the dumpling dough for light and fluffy dumplings.
  • For crispy dumplings, bake uncovered at 350°F (175°C) or steam with the lid on for softer dumplings.
