  • 2 tbsp olive oil or butter
  • 1/2 onion (diced)
  • 2 cloves garlic (minced)
  • 1 1/2 lbs ground beef (or turkey, plant-based crumbles)
  • 1 packet taco seasoning
  • 10 oz diced tomatoes with green chiles
  • 1 1/2 cups beef broth
  • 3 tbsp tomato paste
  • 3 oz cream cheese (softened)
  • 12 oz spaghetti (cooked al dente)
  • 1 1/2 cups shredded cheese (cheddar, Mexican blend, etc.)
  • Cilantro for garnish (optional)

Instructions

  1. Cook spaghetti: Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Sauté onion and garlic: In a skillet, sauté onion in olive oil until soft, about 3-4 minutes. Add garlic and cook for an additional minute.
  3. Cook ground beef: Add ground beef to the skillet and cook until no longer pink, about 5-7 minutes. Drain excess fat.
  4. Add seasonings and ingredients: Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and cream cheese. Cook for 2-3 minutes until cream cheese melts.
  5. Combine spaghetti and sauce: Remove from heat and toss the cooked spaghetti and shredded cheese with the sauce until fully coated.
  6. Garnish and serve: Garnish with cilantro if desired and serve immediately.
