Ingredients

Scale

Kielbasa Bites

  • 2 lbs smoked sausage or kielbasa, sliced on bias (1/2 inch thick coins)
  • 0.5 cup brown sugar, packed
  • 2 tbsp grainy Dijon mustard
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes (plus more for garnish)
  • 2 tbsp fresh parsley, chopped (for garnish)

Dipping Sauce

  • 0.5 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp honey

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Sausages: Slice the smoked sausage or kielbasa into 1/2-inch thick coins on a diagonal bias for an attractive presentation and even cooking.
  3. Make the Glaze: In a bowl, combine the brown sugar, olive oil, grainy Dijon mustard, soy sauce, minced garlic, and red pepper flakes. Mix well until fully combined to create the sticky, flavorful glaze.
  4. Coat Sausages: Place the sliced sausages on the prepared baking sheet and toss them with the glaze mixture until each piece is evenly coated. Arrange the sausages in a single layer for optimal roasting.
  5. Roast Sausages: Roast the sausages in the oven for 15 minutes. Remove the baking sheet, flip the sausages over to ensure even caramelization, and roast for another 10-15 minutes until the bites are sticky and caramelized.
  6. Prepare Dipping Sauce: While the sausages roast, mix the mayonnaise, yellow mustard, and honey in a small bowl until smooth to create a sweet and tangy dipping sauce.
  7. Cool and Serve: Allow the roasted sausages to cool for about 5 minutes so the glaze can set. Garnish with chopped fresh parsley and sprinkle additional red pepper flakes if desired. Serve warm with the honey mustard dipping sauce.

Notes

  • Use smoked kielbasa for the best smoky flavor; polish sausage can be a good alternative.
  • Adjust the amount of red pepper flakes based on your preferred spice level.
  • For a gluten-free version, ensure soy sauce is gluten-free or substitute with tamari.
  • These bites can be made ahead and reheated in the oven before serving.
  • Serve as an appetizer, snack, or part of a party platter.
