  • 3 tablespoons rice vinegar
  • ⅓ cup brown sugar (packed)
  • 1 cup chicken broth (low sodium)
  • ⅓ cup ketchup
  • 1 tablespoon tomato paste
  • ¼ cup pineapple juice (from canned pineapple)
  • ½ teaspoon cornstarch
  • 1 teaspoon salt

For the Stir-Fry:

  • 1 tablespoon vegetable oil
  • 1 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium red bell pepper (cut into 1-inch pieces)
  • 1 medium green bell pepper (cut into 1-inch pieces)
  • ½ cup pineapple chunks

Instructions

  1. Prepare the Meatballs: Combine all the meatball ingredients in a bowl. Form the mixture into small golf ball-sized meatballs.
  2. Cook the Meatballs: Air fry the meatballs at 380°F for 10 minutes or bake at 400°F for 20-25 minutes.

  4. Cook the Veggies: Sauté onion, bell peppers, and garlic in a wok or pan.
