These Sugar Cookie Bars are a delightful twist on traditional sugar cookies. Soft, chewy bars topped with a luscious cream cheese frosting make for a perfect treat any time of year. Easy to make and even easier to enjoy!

For the Cookie Bars:

  • 1 cup (2 sticks) salted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 5 cups all-purpose flour
  • ½ teaspoon table salt
  • ½ teaspoon baking soda

For the Cream Cheese Frosting:

  • 1/2 cup (1 stick) butter, softened
  • 4 oz cream cheese, softened
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • food coloring & sprinkles (if desired, optional)

Instructions

  1. Preheat oven to 350 degrees F. Grease a 12″x17″ or 13″x18″ cookie sheet.
  2. Cream together butter and sugar until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla.
  4. In a separate bowl, combine flour, salt, and baking soda. Add to the wet mixture and mix until just combined. Spread onto prepared cookie sheet.
  5. Bake for 13-16 minutes, until edges are lightly golden. Cool completely.
  6. For the Frosting:
  7. Blend butter and cream cheese until smooth. Add extracts and mix.
  8. Gradually add powdered sugar and cream, blending until smooth. Spread over cooled cookie bars.

Notes

  • You can customize these bars with different colors of frosting and sprinkles for various occasions.
  • Store any leftovers in an airtight container for up to 3 days.
