Ingredients

Scale

Mushroom Filling

  • 16 medium mushrooms, white button or cremini
  • 4 oz cream cheese, softened
  • 1/4 cup parmesan cheese, grated
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/2 tbsp fresh thyme, chopped
  • 1/2 tbsp fresh chives, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Topping and Baking

  • 2 tbsp breadcrumbs
  • 1 tbsp olive oil

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare mushrooms: Clean the mushrooms gently with a damp paper towel to remove any dirt. Remove the stems carefully and finely chop them, setting aside.
  3. Make filling: In a mixing bowl, combine the softened cream cheese, chopped mushroom stems, minced garlic, chopped fresh parsley, thyme, chives, half of the grated parmesan cheese, salt, and pepper. Mix thoroughly until well blended.
  4. Stuff mushrooms: Generously fill each mushroom cap with the prepared cheese and herb mixture, ensuring they are well packed.
  5. Add toppings: Sprinkle breadcrumbs evenly over the stuffed mushrooms, then sprinkle the remaining parmesan cheese on top to add a delicious crust when baked.
  6. Drizzle oil: Drizzle olive oil over the tops of the stuffed mushrooms to help achieve a golden and crispy texture during baking. Arrange them on the prepared baking sheet.
  7. Bake: Bake the mushrooms in the preheated oven for 20 to 25 minutes, or until the tops are golden brown and the filling is bubbly. Remove and let cool slightly before serving.

Notes

  • For a vegetarian-friendly option, ensure the parmesan cheese used does not contain animal rennet.
  • To make this dish gluten-free, substitute regular breadcrumbs with gluten-free breadcrumbs.
  • Fresh herbs greatly enhance the flavor, but dried herbs can be used in a pinch, reducing the quantity accordingly.
  • These stuffed mushrooms can be prepared in advance and baked just before serving.
  • Use cremini mushrooms for a more robust flavor or white button mushrooms for a milder taste.
