Crispy Oat Mixture:

  • 60 g old fashioned oats
  • 110 g brown sugar
  • 85 g all-purpose flour
  • 75 g salted butter, melted
  • 0.5 teaspoon ground cinnamon

Base Layer:

  • Half of the oat mixture

Fruit Filling:

  • 3 medium peaches, peeled and sliced (about 600 g)
  • 150 g strawberries, sliced
  • 55 g brown sugar
  • 9 g cornstarch
  • 80 ml water
  • 0.13 teaspoon salt
  • 0.5 teaspoon vanilla extract

Instructions

  1. Prepare the crispy oat mixture – Combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly.
  2. Assemble base layer – Press half of the oat mixture into a greased 23×23 cm baking pan.
  3. Add fruit – Spread peaches and strawberries over the oat crust.
  4. Make syrup – Cook brown sugar, cornstarch, salt, and water until thickened.
  5. Add vanilla – Stir in vanilla extract into the syrup.
  6. Top with remaining crumble – Sprinkle the remaining oat mixture over the fruit and syrup.
  7. Bake – Bake at 175°C for 35 minutes until golden.
  8. Optional broil finish – Broil for a crispier top for 2-3 minutes.
