For the Strawberry Puree:

  • 8 ounces fresh strawberries, chilled and hulled

For the Pineapple Mixture:

  • 1 ripe banana, peeled and frozen
  • 1.5 cups frozen pineapple
  • 5.3 ounces container coconut Greek yogurt
  • 1.25 to 1.5 cups unsweetened coconut milk beverage

Instructions

  1. Puree strawberries: In a food processor, puree the fresh strawberries until smooth.
  2. Blend pineapple mixture: In a blender, combine banana, frozen pineapple, coconut Greek yogurt, and 1 ¼ cups of coconut milk. Blend until smooth. Add more coconut milk if needed for desired consistency.
  3. Layer the smoothie: Pour the pineapple mixture into glasses one-third full. Add spoonfuls of strawberry puree to each glass and swirl gently with a knife. Repeat layering with pineapple mixture and strawberry puree two more times.
  4. Serve: Serve immediately for optimal taste, or blend all ingredients together for convenience.
