Instructions

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic, cumin, smoked paprika, ground coriander, and cayenne pepper. Cook for another 1-2 minutes until the spices are fragrant and well combined with the vegetables.
  2. Add Lentils and Broth: Add the rinsed lentils, vegetable broth (or water), and the can of diced tomatoes with their juices to the pot. Increase the heat to high and bring the mixture to a rolling boil.
  3. Simmer the Soup: Once boiling, reduce the heat to low and let the soup simmer uncovered for about 25-30 minutes, or until the lentils are tender. During the last 5 minutes of cooking, stir in the chopped kale or spinach so it wilts gently. Season the soup with salt and pepper to your preference.
  4. Blend (Optional): For a creamier texture, use an immersion blender to puree a portion of the soup directly in the pot. Alternatively, transfer one or two cups of the soup to a blender and blend until smooth, then return it to the pot and stir well.
  5. Serve: Ladle the hot soup into bowls. Drizzle with fresh lemon juice if desired and garnish with chopped parsley or cilantro for a fresh finish. Serve immediately and enjoy the comforting, spicy flavors.
