Ingredients

Scale

Main Ingredients

  • 1 decent sized spaghetti squash (to yield 2 cups of strands)
  • 1.5 cups panko bread crumbs
  • 1 cup shredded parmesan cheese
  • 2 eggs
  • Garlic salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare for baking the spaghetti squash.
  2. Bake Spaghetti Squash: Cut the spaghetti squash in half lengthwise and remove the core. Place it flesh side down on a baking sheet and bake for about 45 minutes. Let it cool for 10 minutes before handling.
  3. Extract Squash Strands: Using a fork, scrape out the spaghetti squash strands until you have about 2 cups. Place them in a large measuring cup and press down with a spoon to squeeze out as much water as possible. Drain excess liquid carefully.
  4. Chop Squash Strands: Roughly chop the drained spaghetti squash strands into smaller pieces for easier mixing.
  5. Mix Ingredients: In a large bowl, combine the chopped squash strands, panko breadcrumbs, shredded parmesan cheese, eggs, garlic salt, and black pepper. Stir well until evenly combined.
  6. Form Tater Tots: Using your hands, shape the mixture into small cylindrical tot shapes, around the size of traditional tater tots. Place them on a foil-lined baking sheet. You should get approximately 30 tots.
  7. Bake Tots: Bake in the preheated oven at 400°F for 15 minutes. Flip each tot and bake for an additional 8 to 12 minutes until golden brown and crispy.
  8. Serve: Remove from oven and serve warm with ranch dressing, ketchup, or your preferred dipping sauce. Enjoy your healthy, crispy spaghetti squash tots!
