Pizza Dough
- 1 cup (240 g) sourdough discard (unfed)
- 2 ½ cups (315 g) all-purpose flour
- ½ cup (120 ml) warm water
- 1 tbsp olive oil
- 1 tsp salt
- ¼ tsp instant yeast (optional)
- 1 tsp honey or sugar
- Mix wet ingredients: In a large bowl, combine the sourdough discard, warm water, and olive oil. Stir until the mixture is smooth and fully combined.
- Add dry ingredients: Incorporate the flour, salt, and optional instant yeast into the wet mixture. Mix until no dry flour remains and the dough starts forming.
- Knead the dough: Knead the dough for 8–10 minutes by hand until it becomes smooth and elastic. Add a little extra flour if the dough sticks to your hands or surface.
- First rise: Place the kneaded dough into a lightly oiled bowl, cover it with a cloth or plastic wrap, and let it rise at room temperature for 1–2 hours until slightly puffed. For enhanced flavor, refrigerate it for up to 24 hours.
- Preheat oven: Preheat your oven to 475°F (245°C) and place a pizza stone or steel inside to heat for at least 30 minutes to ensure a crispy crust.
- Shape the crust: On a lightly floured surface or parchment paper, roll or stretch the dough to about ¼ inch thickness, forming your pizza base.
- Pre-bake crust: Slide the crust onto the heated stone or baking sheet and bake for 5 minutes to set the dough before adding toppings.
- Add toppings and bake: Remove the crust briefly to add your favorite pizza toppings. Return the pizza to the oven and bake for an additional 8–12 minutes until the crust is golden and crisp.
- Serve: Slice the pizza and enjoy your homemade sourdough discard crust pizza fresh from the oven!
Notes
- Using instant yeast is optional but speeds up the rising time and helps improve the crust texture.
- Refrigerating the dough for up to 24 hours enhances flavor but is not mandatory.
- Preheating the pizza stone or steel ensures a crispier crust.
- Kneading time is important to develop gluten structure for elasticity and chewiness.
