Cookies:
- 1 cup salted butter, softened
- 1 1/2 cups granulated sugar
- 1 whole egg (at room temperature)
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking powder
Icing:
- 2 cups powdered sugar
- 3–4 tablespoons whole milk
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon almond extract
- To make sugar cookies – In a large bowl, beat butter and sugar until light and fluffy. Add egg and extracts. Mix in flour and baking powder until dough forms.
- Divide and roll out dough – Divide dough, roll out into circles, cut out cookies, and place on a lined cookie sheet. Freeze for 15-30 minutes.
- Bake the cookies – Preheat oven to 350°F. Bake cookies for 8-11 minutes until edges are lightly golden. Cool on a rack.
- To make icing – Whisk together icing ingredients until smooth. Adjust consistency with more milk or powdered sugar.
