Scallions:

2-3 large scallions, roughly chopped

Garlic:

Brown Sugar:

2 tablespoons brown sugar

Chicken Stock:

14.25 ounces chicken stock (or beef stock)

Ramen Noodles:

2 packs ramen noodles

Additional Scallions and Sesame Seeds for Topping (optional)

Instructions

  1. Brown the Beef: In a large skillet over medium heat, brown the beef until no longer pink. Drain any grease, if necessary.
  2. Add Ingredients to Slow Cooker: Transfer the cooked beef to a 6-quart slow cooker. Add carrots, red bell pepper, and scallions.
  3. Prepare Sauce: In a medium bowl, whisk together garlic, soy sauce, brown sugar, and chicken stock. Pour the sauce into the slow cooker and stir to combine.
  4. Cook: Cover and cook on LOW for 4-6 hours.
  5. Add Noodles: About 30 minutes before serving, add the dry ramen noodles (discard seasoning packets). Stir frequently to ensure even cooking.
  6. Serve: Once noodles are tender, serve hot, garnishing with additional scallions and sesame seeds if desired.

Notes

  • You can customize this ramen by adding other vegetables like mushrooms or bok choy.
  • For a spicy kick, add a dash of sriracha or red pepper flakes to the broth.
  • Feel free to use different protein options such as chicken or tofu instead of beef.
