These simple zucchini fritters are a delicious way to enjoy fresh zucchini. Crispy on the outside and tender on the inside, they make a great appetizer or side dish.

Zucchini Fritters:

  • 2 cups grated zucchini, well drained (about 2 large, 1.5 lb total)
  • 1 cup panko-style breadcrumbs
  • 2 large eggs
  • 1/3 cup Parmesan cheese, freshly grated
  • 1/4 cup finely shredded mozzarella
  • 2 garlic cloves, minced
  • Salt, to taste
  • Freshly cracked black pepper, as needed
  • 3 tbsp canola oil

Instructions

  1. Grate the Zucchini: Grate the zucchini using the side of a box grater with large holes. Transfer the grated zucchini into a mesh bag or cheese cloth and squeeze out as much liquid as possible.
  2. Mix the Ingredients: Transfer the well-drained zucchini into a large mixing bowl. Add the panko-style breadcrumbs, eggs, Parmesan cheese, mozzarella, minced garlic, salt, and black pepper. Mix everything together thoroughly until the mixture is evenly combined.
  3. Cook the Fritters: Preheat a large cooking pan over medium heat. Add canola oil to the pan. Portion out the zucchini mixture using an ice cream scoop, shape into fritters, and cook for 4-6 minutes on each side until golden brown.

Notes

  • You can customize these fritters by adding herbs like dill or parsley.
  • For extra flavor, serve with a side of tzatziki sauce.
