Cherries:

  • 1 1/3 cup White granulated sugar
  • 2 Large eggs
  • 1 Egg yolk
  • 5 TBSP Unsalted butter, melted
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 3/4 cup All-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 TBSP Cornstarch
  • 1 tsp Salt
  • 1 cup Semi-sweet chocolate chips

Instructions

  1. Roasting the Cherries: Preheat oven to 400°F. Spread cherries on a baking sheet, sprinkle with sugar, and bake for 10 minutes. Let cool.
  2. Preparing the Brownie Batter: Preheat oven to 325°F. Line pan with parchment paper. Sift together flour, cocoa powder, cornstarch, and salt. Beat sugar, eggs, and egg yolk until fluffy. Mix in melted butter, oil, and vanilla. Fold in dry ingredients. Add cherries and chocolate chips.
  3. Baking the Brownies: Pour batter into pan and bake for 40-50 minutes. Let cool, then freeze for 15 minutes. Top with remaining cherries, cut, and serve.
