  • 9 cups Rice Krispies cereal

Instructions

  1. Prepare Pan: Butter a 9 x 13 x 2 inch baking pan or line it with parchment paper to prevent sticking.
  2. Melt Butter and Marshmallows: In a large saucepan over low heat, melt the butter. Once melted, add all but 1 cup of the mini marshmallows. Stir continuously until the marshmallows are completely melted and the mixture is smooth. Remove from heat.
  3. Add Vanilla and Cereal: Stir in the vanilla extract thoroughly. Then add the Rice Krispies cereal along with the reserved 1 cup of marshmallows, folding gently to evenly coat the cereal in the melted marshmallow mixture.
  4. Press into Pan: Transfer the marshmallow-coated cereal into the prepared pan. Using a buttered spatula, waxed paper, or clean, buttered fingers, gently press the mixture into an even layer. Avoid pressing too firmly to keep the treats light and chewy rather than hard.
  5. Cool and Serve: Allow the treats to cool completely at room temperature for at least one hour. Once set, cut into squares and serve.
