Ingredients
- ½ cup salted butter
- 15 oz mini marshmallows (about 1½ 10 oz bags; reserve 1 cup of marshmallows)
- 1 tsp vanilla extract
- 9 cups Rice Krispies cereal
- Prepare Pan: Butter a 9 x 13 x 2 inch baking pan or line it with parchment paper to prevent sticking.
- Melt Butter and Marshmallows: In a large saucepan over low heat, melt the butter. Once melted, add all but 1 cup of the mini marshmallows. Stir continuously until the marshmallows are completely melted and the mixture is smooth. Remove from heat.
- Add Vanilla and Cereal: Stir in the vanilla extract thoroughly. Then add the Rice Krispies cereal along with the reserved 1 cup of marshmallows, folding gently to evenly coat the cereal in the melted marshmallow mixture.
- Press into Pan: Transfer the marshmallow-coated cereal into the prepared pan. Using a buttered spatula, waxed paper, or clean, buttered fingers, gently press the mixture into an even layer. Avoid pressing too firmly to keep the treats light and chewy rather than hard.
- Cool and Serve: Allow the treats to cool completely at room temperature for at least one hour. Once set, cut into squares and serve.
Notes
- Using salted butter adds a nice balance to the sweetness of the marshmallows.
- Do not pack the mixture tightly when pressing into the pan to avoid overly hard treats.
- For easier removal, lining the pan with parchment paper is recommended.
- Store in an airtight container to maintain freshness, up to 3 days.
- Optional: Customize by adding chocolate chips, peanut butter, or sprinkles to the mix.
