Cookie Dough:

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 2 1/2 cups + 2 tbsp all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1/2 tsp baking soda

Filling and Topping:

  • 2/3 cup strawberry preserves
  • 1 cup powdered sugar
  • 1 1/22 tbsp whole milk
  • 1/2 tsp vanilla extract
  • Rainbow sprinkles (for decorating)

Instructions

  1. Prepare the Dough: Cream butter and sugar, add eggs and vanilla, mix in flour, salt, and baking soda. Chill dough.
  2. Layer the Dough: Press half of the dough into a lined baking pan, spread preserves, top with remaining dough.
  3. Bake: Bake until golden brown. Cool completely.
  4. Glaze: Whisk powdered sugar, milk, and vanilla. Pour over bars, add sprinkles.
  5. Serve: Let set, cut into bars, and enjoy!
