  • 2 small fresh pineapples
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg, beaten
  • 1 1/4 cups low-fat buttermilk
  • splash of vanilla

Coating:

  • vegetable oil, for frying
  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

Instructions

  1. Prepare Pineapple: Peel, core, and slice the pineapples into 1/4-inch thick rings, pat dry. Set aside.
  2. Prepare Batter: In a medium bowl, whisk together the flour, sugar, cinnamon, nutmeg, baking powder, and salt. Add in the egg, buttermilk, and vanilla; stir until just combined.
  3. Fry Pineapple Rings: Heat oil in a pot to 350 degrees F. Dip each pineapple ring into the batter, then fry in batches for 1-2 minutes per side until golden. Drain on paper towels.
  4. Coat with Cinnamon Sugar: While still warm, dredge the fried rings in the cinnamon-sugar mixture.
  5. Serve: Repeat the process with remaining pineapple slices. Serve warm and enjoy!
