Fresh Pineapple:

  • 1 medium fresh pineapple, peeled, cored, and diced

Syrup:

  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjust to taste)

Garnish:

  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Pineapple: Peel, core, and dice the fresh pineapple. Set aside.

  3. Add Pineapple: Add the pineapple chunks to the syrup. Simmer on low heat for 10 minutes, stirring occasionally.
  4. Cool and Garnish: Remove from heat, let cool for 30 minutes, and stir in mint leaves if desired.
  5. Store: Transfer the mixture to sterilized jars. Refrigerate for at least 24 hours before serving.
