Main Ingredients:

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)

Breading:

  • 1/4 cup flour
  • 2 eggs
  • 2/3 cup panko breadcrumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 heaping teaspoon Italian seasoning
  • 3 tablespoons olive oil (divided)

Instructions

  1. Preheat Oven: Preheat the oven to 400F and position the rack in the top third of the oven.
  2. Cut & Season Chicken: Cut chicken breasts in half lengthwise. Pat dry, sprinkle with garlic powder, salt, and pepper.
  3. Prepare Breading Stations: Set up three bowls with flour, beaten eggs, and the panko/parmesan/Italian seasoning mixture.
  4. Coat Chicken: Coat chicken in flour, dip in eggs, then coat with breadcrumb mixture.
  5. Cook Chicken: Fry chicken pieces in olive oil until golden, then transfer to oven and bake until cooked through.
  6. Serve: Serve hot and enjoy!

Notes

  • For extra crispiness, you can double coat the chicken by repeating the egg and breadcrumb steps.
