Dough
- ¾ cup milk, warmed to about 110°F
- 2 ¼ teaspoons active dry yeast
- 1 large egg, room temperature
- ¼ cup (50 g) granulated sugar
- 1 teaspoon kosher salt (if using table salt, add ½ teaspoon)
- 3 cups (375 g) all-purpose flour
- 1 cup (226 g/2 sticks) unsalted butter, cold
Filling
- 4 tablespoons butter, room temperature
- ½ cup (100 g) packed brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon orange zest
- 1 teaspoon ground cardamom
- Pinch kosher salt
Glaze
- 2 cups confectioner’s sugar
- ¼ cup orange juice (or juice from one orange)
- Bloom the Yeast: Warm ¾ cup of milk to about 110°F, then stir in the active dry yeast. Let it bloom for about 5 minutes until foamy.
- Mix Dough Ingredients: In a large bowl, combine the yeast-milk mixture, egg, granulated sugar, and salt. Set aside.
- Add Butter and Flour: Grate the cold butter onto a flat surface, then add it to the bowl along with the all-purpose flour.
- Form the Dough: Use your hands to mix until just incorporated. Continue kneading by hand or use a stand mixer with a dough hook until the dough forms a smooth ball.
- First Rise: Cover the dough and let it rise in a warm spot for 1 hour until doubled in size.
- Roll Out Dough: On a floured surface, roll the dough into a ½-inch thick rectangle.
- Spread Butter: Evenly spread the room temperature butter all over the rolled dough, covering to the edges.
- Prepare Filling: In a small bowl, combine the brown sugar, flour, orange zest, cardamom, and a pinch of salt.
- Add Filling: Sprinkle the brown sugar mixture evenly over the buttered dough.
- Form the Log: Starting from the long edge, roll the dough into a log and pinch to seal the seam. Place seam side down.
- Cut and Twist: Cut the log lengthwise in half, stopping about 1 inch from the end. Lift one half over the other to twist, repeating 2-3 times.
- Shape the Ring: Twist the dough around itself into a circular ring with exposed layers facing up.
- Proof: Place the dough ring in a buttered 8- or 9-inch skillet. Cover and let rise for 1 hour.
- Preheat Oven: Heat oven to 350°F (175°C).
- Bake: Bake the dough ring uncovered for 25 minutes. Cover with foil and bake an additional 10 minutes until golden brown. Remove and cool slightly.
- Prepare Glaze: Whisk together confectioner’s sugar and orange juice until runny.
- Glaze Bread: After the bread rests about 10 minutes, pour the glaze over it, letting it soak into all crevices.
- Serve: Serve warm or at room temperature for best flavor and texture.
Notes
- Make sure the milk is warmed to about 110°F to activate the yeast properly without killing it.
- Using cold butter grated into the dough gives a flaky texture to the bread.
- If you don’t have fresh orange juice, bottled juice can be used but may alter taste slightly.
- The glaze can be adjusted in consistency by adding more sugar for thickness or more juice for a thinner glaze.
- Allow the bread to cool slightly before glazing to prevent the glaze from melting off.
- This bread is best eaten within 1-2 days but can be stored in an airtight container at room temperature.
- Reheat gently before serving if desired to refresh the flavors and soften the bread.
