  • ¼ cup (50 g) granulated sugar

  • 3 cups (375 g) all-purpose flour
  • 1 cup (226 g/2 sticks) unsalted butter, cold

Filling

  • 4 tablespoons butter, room temperature
  • ½ cup (100 g) packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon orange zest
  • 1 teaspoon ground cardamom
  • Pinch kosher salt

Glaze

  • 2 cups confectioner’s sugar
  • ¼ cup orange juice (or juice from one orange)

Instructions

  1. Bloom the Yeast: Warm ¾ cup of milk to about 110°F, then stir in the active dry yeast. Let it bloom for about 5 minutes until foamy.
  2. Mix Dough Ingredients: In a large bowl, combine the yeast-milk mixture, egg, granulated sugar, and salt. Set aside.
  3. Add Butter and Flour: Grate the cold butter onto a flat surface, then add it to the bowl along with the all-purpose flour.
  4. Form the Dough: Use your hands to mix until just incorporated. Continue kneading by hand or use a stand mixer with a dough hook until the dough forms a smooth ball.
  5. First Rise: Cover the dough and let it rise in a warm spot for 1 hour until doubled in size.
  6. Roll Out Dough: On a floured surface, roll the dough into a ½-inch thick rectangle.
  7. Spread Butter: Evenly spread the room temperature butter all over the rolled dough, covering to the edges.
  8. Prepare Filling: In a small bowl, combine the brown sugar, flour, orange zest, cardamom, and a pinch of salt.
  9. Add Filling: Sprinkle the brown sugar mixture evenly over the buttered dough.
  10. Form the Log: Starting from the long edge, roll the dough into a log and pinch to seal the seam. Place seam side down.
  11. Cut and Twist: Cut the log lengthwise in half, stopping about 1 inch from the end. Lift one half over the other to twist, repeating 2-3 times.

  15. Bake: Bake the dough ring uncovered for 25 minutes. Cover with foil and bake an additional 10 minutes until golden brown. Remove and cool slightly.
  16. Prepare Glaze: Whisk together confectioner’s sugar and orange juice until runny.
