Ingredients

Egg Whites:

Kosher Salt and Black Pepper:

2 tablespoons gruyere, cheddar, or dairy-free cheese (optional)

Instructions

  1. Whisk the Eggs: In a small bowl, whisk together eggs, egg white, water, salt, and pepper until well blended.
  2. Saute Onions: Heat olive oil in a medium nonstick skillet over medium heat. Add onions and cook until tender and golden, about 3 to 4 minutes.
  3. Cook Mushrooms: Add sliced mushrooms to the skillet and cook, stirring occasionally, for 3-4 minutes until tender.
  4. Wilt Spinach: Add fresh baby spinach to the skillet and cook until wilted.
  5. Scramble Eggs: Pour the egg mixture into the skillet, stirring gently until the eggs are cooked through and no liquid remains. If desired, add cheese while cooking the eggs.
