Almond Butter:

  • 1 cup (240g)

Honey:

  • 2 tbsp (42g)

Vanilla Protein Powder:

  • 1/4 cup (30g)

Peppermint Extract:

  • 1/4 tsp

Mini Dark Chocolate Chips:

  • 1/4 cup (40g)

Unsweetened Almond Milk (if needed):

  • 12 tbsp (15-30ml)

Instructions

  1. Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
  2. Add Almond Milk: If the mixture is too dry, add 1 tablespoon of almond milk at a time until desired consistency is reached.
  3. Fold in Chocolate Chips: Gently fold in the mini dark chocolate chips.
  4. Form Balls: Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat.
  5. Chill: Place the protein balls on a baking sheet lined with parchment paper. Refrigerate for at least 20 minutes to firm up.
