These delightful Mini Chocolate Chip Muffins are perfect for a quick breakfast or a sweet treat. Made with Greek yogurt and maple syrup, they are moist and flavorful with bursts of mini chocolate chips in every bite.

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Wet Ingredients:

  • 1 cup plain full-fat Greek yogurt
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup maple syrup

Additional:

  • 1 cup mini chocolate chips

Instructions

  1. Dry Ingredients: Whisk together the flour, salt, baking soda, and baking powder in a mixing bowl.
  2. Wet Ingredients: In a separate mixing bowl, whisk together the Greek yogurt, maple syrup, vanilla, and melted butter. Whisk in the eggs.
  3. Combining: Add the dry ingredients to the wet and stir until just combined with a rubber spatula (do not over mix).
  4. Chocolate Chips: Fold in the mini chocolate chips.
  5. Preparation: Spray a mini muffin pan with nonstick spray. Distribute the batter evenly into the muffin pan and top with additional mini chocolate chips, if desired.
  6. Baking: Bake the mini muffins at 350°F for 12-14 minutes, or until a toothpick inserted comes out clean.
  7. Cooling: Cool the muffins for 2-3 minutes in the pan, then remove them onto a wire cooling rack to cool completely.
