Chocolate Mixture
- 1 cup (170 g) couverture white chocolate chips
- 1/4 teaspoon salt
- 4 1/2 teaspoon (10 g) matcha powder
Base
Powdered Sugar Coating
- 1 cup (210 g) powdered sugar
- 2 teaspoon matcha powder
- Melt the white chocolate: Using a double boiler setup, combine the salt and white chocolate chips in a heatproof bowl. Place the bowl over a pot of gently simmering water, ensuring the bottom of the bowl does not touch the water. Stir continuously over low heat until the chocolate has melted into a smooth consistency.
- Sift in the matcha powder: Using a fine-mesh sieve, sift the 4 1/2 teaspoons of matcha powder into the melted white chocolate to prevent clumps. Fold gently with a spatula until fully incorporated and the mixture is smooth.
- Mix the melted matcha chocolate with cereal: Pour the 4 cups of Chex rice cereal into a large mixing bowl. In three separate batches, add the matcha white chocolate and gently fold the cereal with a rubber spatula to evenly coat all pieces. Allow the coated cereal to cool to room temperature.
- Whisk together the powdered sugar and matcha powder: In a separate bowl, combine the powdered sugar and 2 teaspoons of matcha powder. Whisk thoroughly until the mixture is uniform in color and free of lumps.
- Toss with powdered sugar coating: When the cereal mixture has cooled, transfer it with the powdered sugar and matcha mix into a large gallon-sized zip lock bag. Seal and shake vigorously to evenly coat the cereal pieces with the powder. Add additional powdered sugar mixture if needed to achieve full coverage.
- Chill and serve: Spread the coated cereal mixture onto a parchment-lined baking sheet and refrigerate uncovered for 15 to 30 minutes, allowing the coating to set and dry. Once chilled, store in an airtight container in the refrigerator to maintain freshness before serving.
Notes
- Use high-quality matcha powder for a vibrant color and authentic flavor.
- The double boiler method prevents the white chocolate from burning.
- Shaking the cereal in batches helps ensure even coating without clumping.
- Store the puppy chow in an airtight container in the fridge to keep it fresh for up to two weeks.
- For a dairy-free version, substitute white chocolate chips with a suitable non-dairy alternative.
