Simple Syrup:

  • 240 ml water
  • 150 g caster sugar

Mango and Lemon Juice Blend:

  • 390 g mango purée, canned or freshly blended
  • 80 ml freshly squeezed lemon juice

Water:

  • 960 ml sparkling water, or still water for non-carbonated version

Instructions

  1. Prepare Simple Syrup – Combine 240 ml water and 150 g caster sugar in a medium saucepan. Heat over medium, stirring until the sugar fully dissolves and the mixture reaches a simmer. Remove from heat and let cool briefly.
  2. Mix Mango and Lemon Juice – Add 390 g mango purée and 80 ml freshly squeezed lemon juice to a large pitcher. Stir until thoroughly blended.
  3. Incorporate Water – Gradually pour in 960 ml sparkling or still water, stirring regularly to ensure even consistency.
  4. Combine and Serve – Add the prepared simple syrup to the pitcher and stir to combine. Serve immediately over ice or chill in the refrigerator. Stir again before serving if chilled.
