These Lime Margarita Bars are a zesty and refreshing dessert that combines the flavors of a margarita in a bar form. Tangy lime juice and zest, along with a hint of tequila, give these bars a bright and citrusy kick.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup all-purpose flour
  • 7 Tbsp unsalted butter, melted

For the Filling:

  • 2 1/4 cup granulated sugar or sugar substitute, divided
  • 4 eggs
  • 1/3 cup fresh lime juice (from about 57 limes)
  • 1 tsp lime zest
  • 1 Tbsp fresh orange juice
  • 1 Tbsp tequila, optional (if omitted, use an extra tablespoon of orange juice instead)
  • Powdered sugar or sugar substitute, for dusting

Instructions

  1. Preheat oven to 350°F. Line a 9×9 square pan with parchment and spray with cooking spray.
  2. In a large bowl, prepare the crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 12 minutes.
  3. Meanwhile, in another bowl, prepare the filling: Whisk the eggs with the remaining 2 cups of sugar. Whisk in lime and orange juices, zest, and tequila. Then whisk in flour until smooth.
  4. Pour the filling over the hot crust: Bake for an additional 23-25 minutes until the top turns golden and is no longer translucent. Cool completely before cutting.
  5. Dust with powdered sugar: Cut into squares and store in the refrigerator for up to 3 days before serving.
