Dry Ingredients:
- 1 3/4 cup oat flour (certified gluten-free)
- 1/2 tsp baking soda
- 1/2 tsp salt
Wet Ingredients:
- 1/2 cup white sugar
- 1/2 cup applesauce
- 1/2 cup coconut oil, melted (or butter)
- 2 tbsp lemon juice
- zest of 2 lemons
- 2 tbsp almond milk (or milk of choice)
- 1 tsp vanilla
- 2 eggs
- 1 tbsp chia seeds
- Preheat Oven: Preheat your oven to 350°F and line a muffin pan with cupcake liners or spray with non-stick spray.
- Mix Dry Ingredients: In a small bowl, combine oat flour, baking soda, and salt.
