This Keto Brussels Sprouts with Bacon recipe features crispy bacon and tender Brussels sprouts cooked in a cast-iron skillet, seasoned with garlic, paprika, and red pepper flakes, and finished with fresh shredded Parmesan cheese. It’s a flavorful low-carb side dish perfect for keto diets and easy weeknight meals.

Ingredients

Scale

Bacon

  • 8 slices thick-cut bacon, cut into 1-inch pieces

Vegetables & Seasonings

  • 2 pounds Brussels sprouts, washed, bottoms trimmed and cut in half
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon paprika (or smoked paprika)
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon red pepper flakes
  • 5 cloves garlic, minced

Finishing

  • 1/4 cup fresh shredded Parmesan cheese (grated or shaved)

Instructions

  1. Cook the bacon: Heat a large cast-iron skillet over medium heat. Add the bacon pieces and cook until crispy. Once crispy, transfer them to a paper-towel-lined dish to drain excess fat.
  2. Prepare the Brussels sprouts: Drain most of the bacon grease from the pan, leaving about 1 tablespoon. Add the olive oil to the pan, then add the Brussels sprouts. Cook, stirring occasionally, for about 10 minutes until they start to soften and brown.
  3. Season and cook further: Add the minced garlic, paprika, dried parsley, and red pepper flakes to the pan. Season with salt and black pepper. Stir to combine, cover the pan, reduce heat to low, and cook for another 10 minutes until Brussels sprouts are tender.
  4. Combine with bacon: Add the crispy bacon back to the pan. Stir everything together and cook uncovered for 5 more minutes, allowing flavors to meld and some crispness to return.
  5. Serve: Remove from heat, top with freshly shredded Parmesan cheese, and serve warm as a delicious keto-friendly side dish.

Notes

  • For a smoky flavor, use smoked paprika instead of regular paprika.
  • Adjust red pepper flakes according to your spice preference.
  • You can substitute Parmesan with Pecorino Romano for a sharper cheese flavor.
  • Make sure not to overcook Brussels sprouts to retain a slight crunch and avoid bitterness.
  • This recipe pairs well with grilled or roasted meats for a complete keto meal.
