Glaze:

  • 1 ½ cups powdered sugar
  • 2 tablespoons unsalted butter (at room temperature)
  • 1 ½ tablespoons milk
  • 1 tablespoon lemon juice (from ½ lemon)
  • ½ tablespoon lemon zest (from ½ lemon)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F and line cookie sheets with parchment paper or silicone mats.
  2. Mix Dry Ingredients: In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat together the butter and sugar with an electric mixer for 1 minute, or until pale and fluffy.
  4. Add Wet Ingredients: Beat in the egg and vanilla extract until smooth. Mix in the lemon juice and lemon zest.
