Instructions

  1. Heat oil and test kernels: Place the oil and 3 popcorn kernels in a large, wide, heavy-bottomed saucepan over medium heat. Add half the sugar and cover the pan with a lid or aluminum foil. Shake the pan frequently to prevent the sugar from burning as the oil heats.
  2. Pop test kernels and add remaining ingredients: Once the test kernels pop, remove the lid carefully. Add the remaining popcorn kernels, remaining sugar, and sea salt to the pan.
  3. Pop the popcorn: Cover the pan again and return to heat. Shake the pan constantly and vigorously for 3-4 minutes, allowing the popcorn to pop fully and the sugar to caramelize on the kernels.
  4. Finish and serve: When popping slows to about 2 seconds between pops, remove the pan from the heat. Quickly remove the lid and transfer the popcorn to a large bowl to prevent burning. Stir occasionally to break up clumps and discard any unpopped or over-caramelized kernels. Optionally, season with your favorite extra flavorings.
