  • 1 cup dried lentils, rinsed
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Prepare Ingredients: Rinse the lentils thoroughly under cold water to remove any impurities. Dice the carrots, chop the celery stalks, dice the onion, and mince the garlic cloves.
  2. Combine in Freezer Bag: Add the rinsed lentils, diced carrots, chopped celery, diced onion, minced garlic, canned diced tomatoes (with juices), vegetable broth, cumin, paprika, salt, and pepper into a gallon-sized freezer bag. Seal the bag tightly, removing as much air as possible, and lay it flat in the freezer.
  3. Thaw Before Cooking: When ready to cook, remove the freezer bag from the freezer and thaw it overnight in the refrigerator to ensure even cooking.
  4. Cook in Crockpot: Pour the thawed contents into your crockpot. Set the slow cooker to low heat and cook for 6 to 8 hours, allowing the lentils and vegetables to become tender and flavors to meld beautifully.
  5. Final Seasoning and Serve: Once cooked, stir the soup well, taste and adjust the seasoning with additional salt and pepper if needed. Serve the lentil soup hot, ideally accompanied by crusty bread for a complete and satisfying meal.

Notes

  • Use vegetable broth for a vegetarian version or substitute with chicken broth for extra flavor if preferred.
  • Soaking lentils before freezing is not necessary since they will cook in the crockpot.
