Ingredients
- 1 cup dried lentils, rinsed
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Prepare Ingredients: Rinse the lentils thoroughly under cold water to remove any impurities. Dice the carrots, chop the celery stalks, dice the onion, and mince the garlic cloves.
- Combine in Freezer Bag: Add the rinsed lentils, diced carrots, chopped celery, diced onion, minced garlic, canned diced tomatoes (with juices), vegetable broth, cumin, paprika, salt, and pepper into a gallon-sized freezer bag. Seal the bag tightly, removing as much air as possible, and lay it flat in the freezer.
- Thaw Before Cooking: When ready to cook, remove the freezer bag from the freezer and thaw it overnight in the refrigerator to ensure even cooking.
- Cook in Crockpot: Pour the thawed contents into your crockpot. Set the slow cooker to low heat and cook for 6 to 8 hours, allowing the lentils and vegetables to become tender and flavors to meld beautifully.
- Final Seasoning and Serve: Once cooked, stir the soup well, taste and adjust the seasoning with additional salt and pepper if needed. Serve the lentil soup hot, ideally accompanied by crusty bread for a complete and satisfying meal.

- Use vegetable broth for a vegetarian version or substitute with chicken broth for extra flavor if preferred.
- Soaking lentils before freezing is not necessary since they will cook in the crockpot.
