For the ground beef mixture:

  • 1 lb ground beef (85% lean)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 cup beef broth
  • 1 tsp salt
  • 1/2 tsp black pepper

For the mashed potatoes:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled & diced
  • 3 tbsp butter
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Boil and mash the potatoes: Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, milk, salt, and pepper. Set aside.
  2. Cook the ground beef mixture: In a skillet over medium heat, cook the ground beef until browned (5–7 mins). Drain excess fat if needed. Add onion and garlic, cooking until softened (3–4 mins). Stir in tomato paste, Worcestershire sauce, beef broth, and frozen vegetables. Simmer for 5 mins.
  3. Assemble and bake: Preheat the oven to 375°F (190°C). Spread the beef mixture evenly in a baking dish. Top with the mashed potatoes, spreading evenly. Bake uncovered for 20 mins or until slightly golden.
  4. Serve: Allow the Shepherd’s Pie to cool slightly before serving. Enjoy!
