Ingredients

Scale

Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks

Vegetables and Aromatics

  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 medium potatoes, peeled and cubed
  • 1 cup green beans, trimmed and cut into 1-inch pieces

Other Ingredients

  • 2 tablespoons olive oil
  • 6 cups low-sodium chicken broth
  • 1 tablespoon tomato paste (optional for depth)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Sear the Chicken: Heat olive oil in a large pot over medium-high heat. Add the chicken chunks, season them with salt and pepper, and sear until they’re lightly browned on all sides, which should take about 4 to 5 minutes. Once browned, remove the chicken from the pot and set aside to keep warm.
  2. Sauté the Aromatics and Vegetables: In the same pot, add the diced onion, sliced carrots, and celery. Cook these vegetables for 5 to 7 minutes until they start to soften. Then, stir in the minced garlic and cook for an additional 1 minute until the garlic becomes fragrant.
  3. Add Remaining Vegetables and Herbs: Stir in the tomato paste if using, then add the cubed potatoes, green beans, dried thyme, dried rosemary, and bay leaf. Return the seared chicken chunks to the pot and mix everything together evenly.
  4. Simmer the Stew: Pour in the chicken broth and stir well to combine. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer gently for 30 to 35 minutes. This will ensure the chicken is fully cooked and the vegetables are tender.
  5. Season and Garnish: Taste the stew and adjust the seasoning with salt and pepper as needed. Remove the bay leaf from the pot. Finally, sprinkle the stew with chopped fresh parsley for a burst of color and freshness. Serve the stew hot and enjoy.

Notes

  • You can use either chicken thighs or breasts depending on your preference; thighs tend to be more flavorful and juicy.
  • Tomato paste is optional but adds a deeper flavor to the stew.
  • Low-sodium chicken broth helps control the salt level for a healthier meal.
  • Feel free to substitute or add other vegetables like peas or mushrooms according to season and taste.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
