Strawberry Filling
- 3 cups fresh strawberries, diced (or frozen, fully defrosted and drained)
- 1/4 cup maple syrup
- 1 tablespoon lemon juice
- 1–2 tablespoons lemon zest
- A pinch of sea salt
- 2 tablespoons tapioca starch
Oatmeal Base and Topping
- 1 1/2 cups rolled oats (gluten free if needed)
- 1 1/2 cups almond flour
- 1/2 teaspoon baking soda
- 1/8 teaspoon sea salt
- 1/2 cup maple syrup
- 1/3 cup coconut oil, solid at room temperature
- 1 teaspoon lemon juice
- Prepare the Strawberry Filling: In a small pot over medium heat, combine diced strawberries, maple syrup, lemon juice, lemon zest, and sea salt. Simmer for 5-10 minutes until the strawberries have released a good amount of liquid. Stir in tapioca starch and continue to simmer for an additional 1 minute. Remove from heat and set aside.
- Preheat the Oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line an 8×8 inch baking dish with parchment paper for easy removal.
- Combine Oatmeal Mixture: In a large mixing bowl, mix together rolled oats, almond flour, baking soda, and sea salt. Add maple syrup, solid coconut oil, and lemon juice, then combine thoroughly. Use your hands or the back of a spoon to break up any clumps and ensure even mixing.
- Assemble the Bars: Reserve 1/2 to 3/4 cup of the oatmeal mixture. Press the remaining oatmeal mixture evenly into the prepared baking dish as the base layer. Spread the strawberry filling evenly over the oatmeal base. Sprinkle and gently press the reserved oatmeal mixture on top as the crunchy topping.
- Bake the Bars: Bake in the preheated oven for 20-25 minutes until the edges are slightly golden and the bars are cooked through.
