For the Meatballs:
- 1 lb lean ground beef
- 3/4 cup soft breadcrumbs
- 1/4 cup onion (finely chopped)
- 2 cloves garlic (finely minced or pressed)
- 1 tbs soy sauce
- 1/2 tsp grated fresh ginger
- 2 eggs
- 2 tbs milk or cream
- 1/4 tsp pepper
For the Sauce:
- 8 oz can pineapple chunks including juice
- 1 cup dark brown sugar
- 1/2 cup rice vinegar
- 3 tbs soy sauce
- 1 medium green pepper (cut in chunks)
- 2 tbs cornstarch
- 2 tbs water
- Preheat Oven: Preheat oven to 350F/180C. Line a large baking sheet with parchment.
- Prepare Meatballs: In a large bowl, mix all meatball ingredients and shape into 1-inch balls. Place on the baking sheet and bake for 20 minutes until cooked through.
- Make Sauce: Drain pineapple juice into a bowl. In a skillet, combine the juice, brown sugar, rice vinegar, soy sauce (except for the 3 tablespoons), and heat until boiling. Mix cornstarch with water and add to thicken the sauce.
- Finish Dish: Add pineapple chunks and green pepper to the sauce. Boil for 1 minute. Add the meatballs to the skillet, coat with the sauce, and heat through.
Notes
- You can serve these Hawaiian meatballs over rice or noodles for a complete meal.
- Adjust the sweetness or tanginess of the sauce to suit your taste preferences.
