  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 skinless, boneless chicken breasts
  • 2 teaspoons Creole-style seasoning

For the Guacamole:

  • 2 avocados, peeled and pitted
  • 1 small tomato, diced
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh lime juice
  • Garlic powder to taste
  • Salt and ground black pepper to taste
  • 4 slices pepper Jack cheese

Instructions

  1. Prepare the Chicken: Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler.
  2. Heat oil and butter in a skillet over medium heat. Add chicken breasts; cook until no longer pink on the inside and golden brown on the outside, seasoning each side with Creole seasoning, about 10 minutes per side.

  3. Make the Guacamole: Scoop avocados into a bowl. Add tomato, onion, lime juice, garlic powder, salt, and black pepper; mash together.
  4. Assemble and Broil: Spoon about ⅓ cup guacamole onto each chicken breast, top with 1 slice pepper Jack cheese; broil until cheese is melted and bubbling, 2 to 4 minutes.
