For the Noodles:

  • 9 oz ramen or rice noodles, cooked according to package instructions

For the Chicken:

  • 1 tablespoon sesame oil
  • 1 lb ground chicken
  • 1 bunch green onions, white parts finely minced and green parts cut into 1-inch pieces
  • 2 medium cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 3/4 cup sweet chili sauce
  • 2 tablespoons light brown sugar
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice wine vinegar

For Topping:

  • Sesame seeds and red pepper flakes

Instructions

  1. Heat the skillet: Heat a large skillet over medium-high heat. Add sesame oil and swirl to coat bottom. Add ground chicken and white parts of onion to pan and break up over medium-high heat until chicken is no longer pink.
  2. Cook aromatics: Reduce heat to medium and add garlic, ginger, and green parts of green onion. Let cook 2-3 additional minutes until fragrant.
  3. Make the sauce: In a small bowl, combine chili sauce, brown sugar, soy sauce, and rice vinegar. Toss sauce and ramen noodles into ground chicken and cook 3-4 minutes until noodles are bubbly and coated in sauce.
  4. Season and garnish: Season noodles with salt and pepper to taste if needed and garnish noodles with sesame seeds and red pepper flakes. Serve warm and enjoy!
