Zucchini:

  • 3 pounds small-medium zucchini (cut in halves lengthwise)

Garlic Dressing:

  • 3 small garlic cloves (grated)
  • 2 tablespoons olive oil or avocado oil
  • 3/4 teaspoon salt
  • Ground black pepper (to taste)

Instructions

  1. Prepare Dressing: In a small bowl, whisk together oil, garlic, salt, and pepper.
  2. Marinate Zucchini: Add zucchini to a large bowl or baking dish with a lid. Pour the dressing on top, close the lid, and shake gently until evenly coated. Alternatively, mix by hand or brush dressing onto each zucchini.
