Ginger Simple Syrup:
- 4 inches fresh ginger, roughly chopped
- 2 cups water
- 2 tbsp agave syrup
For the Refresher:
- Handful of fresh mint
- Lime-flavored sparkling water
- Fresh lime juice
- Ice
- Ginger Simple Syrup: Add the ginger, water, and agave syrup to a small saucepan and bring to a boil over medium-high heat. Once boiling, reduce to a simmer for about 15 minutes. Strain out the ginger and cool the syrup completely. Store in the fridge.
- For the Refresher: Muddle a few sprigs of mint in the bottom of a glass. Add ice, pour in the chilled ginger simple syrup, fill with lime-flavored sparkling water, squeeze in lime juice, stir, and garnish with mint.
