This Ginger Lime Refresher is a zesty and refreshing drink perfect for any occasion. The combination of fresh ginger, mint, and lime creates a flavorful and invigorating beverage that will cool you down on a hot day.

Ginger Simple Syrup:

  • 4 inches fresh ginger, roughly chopped
  • 2 cups water
  • 2 tbsp agave syrup

For the Refresher:

  • Handful of fresh mint
  • Lime-flavored sparkling water
  • Fresh lime juice
  • Ice

Instructions

  1. Ginger Simple Syrup: Add the ginger, water, and agave syrup to a small saucepan and bring to a boil over medium-high heat. Once boiling, reduce to a simmer for about 15 minutes. Strain out the ginger and cool the syrup completely. Store in the fridge.
  2. For the Refresher: Muddle a few sprigs of mint in the bottom of a glass. Add ice, pour in the chilled ginger simple syrup, fill with lime-flavored sparkling water, squeeze in lime juice, stir, and garnish with mint.
