Potatoes

  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

  1. Preheat and prepare potatoes: Preheat your oven to 400°F (200°C). Spread the halved baby potatoes on a baking sheet, drizzle with 2 tablespoons of olive oil, season with salt, pepper, dried thyme, and dried rosemary, and toss to coat evenly.
  2. Roast potatoes: Place the baking sheet in the preheated oven and roast the potatoes for about 20-25 minutes or until they are golden and tender when pierced with a fork.
  3. Cook steak bites: While the potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, seasoning with salt and pepper. Cook in batches if necessary to avoid overcrowding.
  4. Sear steak: Sear each side of the steak bites for about 2-3 minutes until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.
  5. Sauté garlic and deglaze: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the lemon juice to deglaze the pan, scraping up any flavorful bits from the bottom.
  6. Combine steak with garlic sauce: Return the steak bites to the skillet and toss them to coat well with the garlic sauce. Remove the skillet from heat.
  7. Toss potatoes with steak: Once the potatoes are roasted, add them to the skillet with the steak and garlic sauce. Toss everything together gently to combine the flavors.
  8. Garnish and serve: Garnish the dish with freshly chopped parsley and sprinkle red pepper flakes if desired for extra heat. Serve immediately and enjoy.
