Perfect for busy weeknights, this dish delivers bold flavors with minimal cleanup.

Ingredients

Scale

Steak Bites

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian herbs (such as rosemary and oregano)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Potatoes

  • 1 lb Yukon Gold or baby potatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon rosemary, chopped
  • 1 teaspoon oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Prepare the Skillet: Heat a cast-iron skillet over medium-high heat. Add olive oil and 2 tablespoons of butter, allowing the butter to melt completely to create a flavorful cooking base.
  2. Cook the Potatoes: Add diced potatoes, minced garlic, rosemary, oregano, salt, and pepper to the skillet. Cook for about 4 minutes without stirring to allow a crispy crust to form. Then stir and continue cooking for an additional 3-4 minutes until the potatoes are tender when pierced with a fork. Remove potatoes from the skillet and set aside.
  3. Sear the Steak Bites: Return the skillet to high heat. Add the remaining 2 tablespoons of butter and let it melt. Place the steak cubes in a single layer. Cook for 1 minute without stirring to develop a sear. Flip or stir and cook for another 1-2 minutes until reaching desired doneness (e.g., medium-rare to medium for best tenderness).
  4. Combine and Serve: Add the cooked potatoes back to the skillet and toss gently to combine with the steak. Taste and adjust seasoning with additional salt and pepper if needed. Garnish with freshly chopped parsley. Serve immediately for best flavor and texture.

Notes

  • Use tender cuts like sirloin, ribeye, filet mignon, or New York strip for optimal texture and flavor.
  • Yukon Gold, baby, or red-skinned potatoes hold their shape well and get crispy; avoid russet potatoes as they can become too soft.
  • If potatoes brown too quickly without becoming tender, reduce heat to medium-low, add 2 tablespoons warm water, cover and cook for an extra 3-4 minutes until water evaporates and potatoes are tender.
  • Avoid overcrowding the skillet to ensure even cooking and a good sear; cook steak bites and potatoes in batches if necessary.
  • Leftovers store well in an airtight container in the fridge for up to 3 days; reheat in a skillet or air fryer to maintain crispiness.
  • For variation, try adding vegetables like asparagus or bell peppers during cooking.
