Instructions

  1. Preheat: Preheat the oven to 400 degrees Fahrenheit to prepare for finishing the ribs in the oven.
  2. Season: Season the lamb ribs generously with salt and pepper on both sides to enhance flavor.
  3. Sear: Heat a large cast-iron skillet over medium-high heat until hot. Add olive oil, then place lamb ribs in the pan. Sear ribs on both sides for about 5 minutes each until they develop a golden-brown crust.
  4. Transfer: Remove the ribs from the skillet and place them on a plate. Cover with foil to keep warm while you prepare the sauce.
  5. Sauté: Lower the skillet heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant.
  6. Sauce: Stir in the chopped fresh rosemary and cook for another 30 seconds. Add brown sugar and chicken broth, stirring continuously until the sugar dissolves completely. Season with salt and pepper to taste.
