For the Salad:

  • 1 cup red onion, finely chopped
  • 1 cup cucumber, finely chopped
  • 1 ½ cup fresh corn
  • ¾ cup colored bell pepper
  • 15 cherry tomatoes, chopped
  • 1 small green apple, chopped
  • 1 cup pomegranate seeds
  • 1 cup boiled chickpeas
  • 2 tablespoons coriander leaves

For Dressing:

  • 5 teaspoons olive oil (divided)
  • 11.5 tablespoon coriander chutney
  • 2 teaspoons tamarind date chutney
  • ½ teaspoon black salt (kala namak), or to taste
  • 11.5 teaspoon Kashmiri red chili powder
  • 12 teaspoons chaat masala
  • Lemon juice, as needed

Instructions

  1. Prepare the Onions: In a bowl, mix the finely chopped red onion with lemon juice and salt. Set aside.
  2. Saute the Corn: Cook fresh corn in olive oil, salt, and red chili powder. Let it cool.
  3. Assemble the Salad: In a large bowl, combine cucumber, bell pepper, apple, pomegranate, chickpeas, coriander leaves, corn, and marinated onions.
  4. Add Dressing: Drizzle with olive oil, coriander chutney, tamarind date chutney, black salt, red chili powder, chaat masala, and lemon juice. Mix gently.
  5. Rest and Serve: Let the salad sit for 10-15 minutes to marinate. Top with masala peanuts before serving.
